I made homemade lentil soup for dinner tonight, served with homemade granary bread and Guernsey butter. I can’t for the life of me remember where this recipe came from, but it was so delicious I just had to share …
Ingredients
- 500g red lentils (washed – no need to soak)
- Some butter or oil for frying
- 2 large onions, roughly chopped
- 2 litres of vegetable, ham or chicken stock (I used chicken stock made from stock cubes)
- 1.5 teaspoons tumeric
- 2 teaspoons cumin
- 2 teaspoons coriander
- 4 dried curry leaves
- 0.5 teaspoons cinnamon
- 1 teaspoon cayenne pepper (I used the hot stuff, but that makes for quite a hot soup! Just adjust this amount if you don’t like it too spicy)
This recipe makes a really big pot of soup (probably enough for 8 – 12 people)
This is what I did…
- Heat the butter or oil in a pan and add the chopped onions.
- Sweat the onions off in the pan for 5 minutes.
- Add all your spices to the onions in the pan and stir.
- Add your washed lentils to the pan.
- Pour in your stock.
- Simmer for 30 minutes until the lentils are soft.
- Blend until smooth (I used one of those hand-held blender thingies).
- Season with black pepper and serve.
Yummy!

This is one I will definitely be trying. NOt only does it look appetising and warming for the winter, if you are following a Slimming World Extra Easy diet it is FREE. Thanks Martine.
Yes it is ‘free’ if you use spray oil instead of butter – it tastes too good to be free! Enjoy
mmm, looks so yummy! I’m going to give this a try very soon….
Oooh do, Laura, and please let me know how you get on
Soup is the best. Big batches of soup are even better though! Nom nom.
I never have much success with soup – this is really the only one that I can make taste nice. But I have just ordered a Covent Garden soup book from book club at work. I feel that this is going to be my Year of Soup….!
Oh my word. Yum yum yum. I’d been looking forward to it all day and I wasn’t disappointed. So spicey and filling. I added cooked broccoli to my bowl for some veg and was lush. This is on my list of regular soups just for me. Thank you for the recommendation. Soooooo goood.
You are most welcome Mandy – glad you enjoyed it! Thanks for your comment
Love lentil soup. Have just a basic reciepe from my grandmother in Germany. I’ll have to try this. Sounds delicious. Thanks for sharing.
No problem! Please comment again to let me know how you get on
Martine
I made this on the weekend and it was really enjoyed by everyone! The consensus was that it makes a great winter soup.
That’s fab Laura – I am glad it went down well
