Spicy Lentil Soup Recipe

Homemade lentil soup for dinner

I made homemade lentil soup for dinner tonight, served with homemade granary bread and Guernsey butter.  I can’t for the life of me remember where this recipe came from, but it was so delicious I just had to share …

Ingredients

  • 500g red lentils (washed – no need to soak)
  • Some butter or oil for frying
  • 2 large onions, roughly chopped
  • 2 litres of vegetable, ham or chicken stock (I used chicken stock made from stock cubes)
  • 1.5 teaspoons tumeric
  • 2 teaspoons cumin
  • 2 teaspoons coriander
  • 4 dried curry leaves
  • 0.5 teaspoons cinnamon
  • 1 teaspoon cayenne pepper (I used the hot stuff, but that makes for quite a hot soup!  Just adjust this amount if you don’t like it too spicy)

This recipe makes a really big pot of soup (probably enough for 8 – 12 people)

This is what I did…

  1. Heat the butter or oil in a pan and add the chopped onions.
  2. Sweat the onions off in the pan for 5 minutes.
  3. Add all your spices to the onions in the pan and stir.
  4. Add your washed lentils to the pan.
  5. Pour in your stock.
  6. Simmer for 30 minutes until the lentils are soft.
  7. Blend until smooth (I used one of those hand-held blender thingies).
  8. Season with black pepper and serve.

Yummy!
